Healthy Broccoli soup with mango sea salt

Simple Broccoli Soup for all the broccoli haters out there. It's simply delicious, even if you normally don't like broccoli. This is one recipe that will shake up your meal plan! Adding Pook mango sea salt coconut chips gives this soup a fun yummy taste!

Serves: 4 Person

Preparation time: 10 minutes

Cook time: 30 minutes

Ingredients:                    Equipement:

 

1 kg Broccoli                          Saucepan

2  Onions                                 Pan

1,5 l   Water

3 Veggie stock cubes

250g             

Almond milk

Mango Sea Salt Coconut Chips


 

                                                               Instructions:

 

 

1. Prepare the stock

Bring 1,5 l of water to boil. Add 3 stock cubes. Leave to dissolve over medium heat for about 5 minutes. Set aside.

 

2. Cut the broccoli

Wash the broccoli and cut it into pieces.

 

3. Chop and stir in the onions

Chop the onions and stir them in a heavy saucepan with 2 spoons of olive oil. Cook over medium then low heat for about 5 minutes, until the onions become translucent.

 

4. Add the broccoli and the stock

Add the broccoli to the onions and cook them for about 2 to 3 minutes over medium heat. Cover with the stock and bring to boil. Cook until a knife can be inserted in the broccoli easily.

 

5. Process with a hand blender and season

Out of the heat, process the preparation using a hand blender or a food processor. Season to taste with salt.

 

6. To finish and serve

When ready to serve, for a crunchy pinch, combine with mango sea salt coconut chips.
